• a handful of spinach
• 65g of flour
• 100ml of milk
• an egg

Stir the flour with the milk, egg, salt and pepper. Dice the tomato and cut the carrots into pieces, and the spring onions and peppers - in strips. Then roast the vegetables in half of the oil for 5 minutes. Add the spinach and sauté with half of the lemon juice to allow it to simmer briefly. Mix the quark with the parsley, chives, a little salt and pepper and the rest of the lemon juice. Heat some inl into the pan and add half of the dough (you can make two pancakes). Sprinkle with sesame seeds and fry over medium heat until the pancakes are done. Finally, coat the pancakes with the cottage cheese, spread the vegetables over them and garnish with cress. Finished!
